I was asked “What is that?” by a Mum at school drop off last week. When I mentioned that our farm is at Rockleigh.  We had started a little business selling our beef by quarters or halves, farm direct 9 months ago.

 

Good question. What is that! You are not the first to ask. And I am confident not the first to think it, but not ask. So here is our run down on What is a Quarter of Beef? Straight from me, Farmers wife, Mum of two kids. You can call me Misses Farmer.

 

I am relatively new to the world of the processing and details of farm direct meat.

I have been on a pretty steep learning curve over the past 9 months.

I grew up on a farm. We had sheep. My Dad butchered our own lamb on our farm and I recall this. However,  I also recall that generally the chops were on the tough side (no offence Dad!). Dad was doing what he had to do in the 1980’s to feed his family.

When I married Mister Farmer around 15 years ago, I was introduced to the world of farm direct beef for the first time. Generally, it arrived prepared and packaged. On the occasion that I did see the cut sheet, I really was pretty overwhelmed by a lot of the choices. There is a lot of decisions to make when choosing how to break down a whole animal.

About 18 months ago we talked of the idea of joining in with Farmer to Fridge. Selling our beef and lamb farm direct, farm to plate. We knew how great our beef tasted. We wanted to share this with others too. The idea floated around, but no action until September 2023.

Over the past 9 months I have learnt a great deal about the cuts of a sheep and cow.  As well as learning,  just how much more there is to learn. I have developed an exceptional respect for the skills of a butcher in their knowledge of all the different types of cuts, the physical nature of the work of butchering and their vast knowledge and experience. I don’t pretend to have even a partial knowledge of what a butcher does of a quarter of beef. However, like you, I have been new to this idea of buying beef farm direct. So, what better person than me, to help guide you through and answer your questions? As I understand what the questions are.   I have done the leg work in finding answers. As well as spent the day with a butcher while one of our cows was processed.

Unlike my Dad’s tough lamb chops, I can vouch that our beef is processed and packaged by a professional butcher, as well as dry hung for 2 weeks. Our grass fed beef and lamb is prime for flavourful and succulent eating. Our cows graze in our generous sized open paddocks, amongst the rocky outcrops and large gums on our farm at Rockleigh in the Adelaide Hills. We offer hay when the grass turns golden and our stock feed levels reduce. What is most important to us is looking after our animals.

 

Ok, onto the questions.

Is our Quarter of Beef the Forequarter or Hindquarter?

Our quarter of beef is a mixed quarter of beef. This means that you receive every cut from the forequarter and the hindquarter of the cow. In the quantity of a quarter of beef for the whole cow.

What cuts are in the quarter of beef from our farm?

Our Grass Fed Beef Box features the Tomahawk (ribeye bone in), trimmed and ready for you to devour!

How many people does the quarter of beef feed?

I recommend a quarter of beef for a family of two adults and two kids, 1-2 meals a week for 6 months.

How much freezer space do I need for a quarter of beef?

In an upright freezer. A quarter of beef takes 1/2 to 2/3 of the space.

How is the Quarter of Beef Packaged?

Our beef is packaged in convenient packaging of 2 serves or 500g of mince. Meat is cryovaced. With the exception of sausages and burgers, which are packaged in trays and plastic wrap. All in a cardboard box. Ready to put straight into your freezer.

How do we pay?

Remember, that Adelaide Hills Farmers Market Members get a 10% discount off of purchases from our farm.

Will my order be left on my doorstep?

No, your Quarter of Beef delivery will not be left on your doorstep.

You will receive notification of the day your animal is going to be processed. Your delivery day will be approximately two weeks after this date. You will receive at least 3 days (usually 5 days) notice of the actual date of your beef quarter delivery. We hire a refrigerated ute (approved for meat delivery) I will text you when I leave the processors loaded with your beef, with a delivery with a delivery window time. See you on delivery day!

Can I split a quarter of beef with a family member or friend?

Yes you can split an order of a quarter of beef with a family member or friend. Our orders are one delivery per order.

So we could deliver to you; then your friend or family member could come pick up from your place. Or visa versa.

The process of splitting the quarter would take less than 20 minutes I think. Our quarter of beef comes all in boxes, in convenient individual packaging. It wouldn't take long at all to open the boxes, then split the beef packages, then put it back into boxes for each person. Simples!

How do I know that I will receive the dressed weight that I have ordered?

On the abattoirs documentation, the dressed weight of the whole animal is listed. This is how we know the dressed weight. This is how we know that you have received what they have ordered and paid for.

What happens it the dressed weight isn’t met?

If we do receive documentation from the Abattoirs after processing and the dressed weight of the cow is low. We would reimburse you for the difference in between what you purchased and what was delivered.

How much beef is in the quarter of beef?

We guarantee that customers will receive a minimum of 35kg+ of beef in a quarter of beef purchased from our farm. Plus bones for bone broth.

We choose to exceed our customers expectations. This means that we will exceed the dressed weight. You will receive a higher dressed weight than you have purchased. You will receive more that the minimum kg of beef when purchasing a quarter of beef from our farm.
