Grass Fed Corned Beef Recipes - Two ways : Traditional and New Mustard Hack.

We had a lovely Grass Fed Corned Beef from our farm in the fridge waiting to be cooked.

For something different, I decided to cut it in half and try cooking it two ways.

First way is my regular corned beef, a traditional corned beef recipe.

The second way is the new hack I have been hearing about, the mustard dry roast corned beef. This has also been recommended to me by my lovely hairdresser.


There are a few options with your farm fresh corned beef from us:

1/. Corned beef can be left in the fridge for a few weeks to marinate in the brine after delivery, and then cooked.

2/. Or frozen after delivery. Then placed in the fridge to defrost and left to marinate in the brine for a few weeks. And then cooked.


Traditional Corned Beef

This is the traditional corned beef that I remember growing up enjoying, how my Mum cooks it. It's a favourite of my Dad's. The long, slow cooking leaves the beautiful corned beef from our farm so tender and falling apart. It's a beautiful hearty and warming meal so well matched with creamy mash potatoes.

Ingredients

Corned Beef

2 carrots, cut up

1 onion, cut in quarters

2 bay leaves

1 tablespoon peppercorns

Ground black pepper

Beef Stock to cover beef

Method

Place corned beef in slow cooker.

Place carrots, onions, bay leaves in the slow cooker. Grind black pepper over the top of the beef.

Cover beef with beef stock.

Place on the lid. Turn on high and cook for 6 - 8 hours.

Serve with cheese sauce, mash potato, peas and corn.

Corned Beef Hack - Dry Mustard

This is a new hack, a new twist on how to cook corned beef, which has been growing in popularity. This dry slow cook mustard method of cooking Corned Beef has been recommended to me by my hairdresser. So I am am sharing this lovely version of corned beef. Which is wrapped up in a parcel and leaves your slow cooker clean and dry - true story!

Ingredients

Corned beef

2 tablespoons honey

2 tablespoon Dijon mustard

1 tablespoon of grain mustard

Method
Tear two pieced of alfoil. Place them on the bench top in a + position.

Tear two pieced of baking paper. Place the on the bench top in a + position, on top of the alfoil.

Pat dry the corned beef with paper towel.

Place corned beef on top of baking paper, in the centre of the +.

Mix together in a small bowl the honey, and mustards. Spread over the top of the corned beef.

Wrap up the corned beef into a parcel. A baking paper layer. Then a alfoil layer.

Place the beef in the slow cooker for 6 - 8 hours on high.

Serve with mash, peas and corn.
