Honey and Cinnamon Sourdough Waffles

Recently I have begun playing with sourdough again.

About 18 months ago, I had a sourdough starter going and tried a few recipes. However I neglected it and it ended up in the chook bin.


Now I have got a new sourdough starter cranking along.

I followed the sough dough starter recipe from David Gillespe’s Book, The Good Fats Guide (p. 98).

Sough Dough Starter Recipe

2 tablespooons Greek Yoghurt

50g Plain Flour

50g Water

  • Leave covered on the bench or a warm spot for a day. Discard most each day. To the scrapings in the bottom of the jar, add 2 tablespoons of flour and 1 1/2 tablespoons of water.Mix well. Cover and leave in a warm spot. REPEAT!

  • When you start to see bubbles, then things are ticking along well. Congratulations! You have grown and active sourdough starter!

For a dairy free starter, use flour and water with the same process.

The starter eats the flour. So more flour is needed than water. The starter should be a thick paste after it is fed.

I have found tips helpful from The Hopewell Heights and Farmhouse on Boone You Tube channels to help get my starter ticking along.


After I had my starter going, I came inside on morning to find remnants of cooking having occured!

An open flour pot, flour scattered on the kitchen table and when I walked over near our fire, my sourdough starter had produced a baby! So now we have two sourdough starters ticking along at our place! Miss Farmer has one too.

Waffles became a bit of a thing in our family after we attended by brothers wedding. We stayed overnight in the Clare Valley and my eldest chose waffles for her breakfast. For her next birthday she asked for waffles for her birthday breakfast. We borrowed a waffle maker, gave it a go. Then our playing with waffles began! We are on to our second waffle maker! It is a much loved Saturday morning breakast in our family.

So far these Honey and Cinnamon Sourdough Waffles have been the most successful recipe from my sourdough starter. So I thought I would share. The honey and cinnamon combination is really delicious! Almost a gingerbread type flavour waffle. And a lovely change from our regular waffle recipe.

These honey and cinnamon sourdough waffles were a hit with our family from the first time I cooked them for a Saturday morning breakfast, before watching Bluey together. They pair perfectly with Green Valley Strawberries from our local Adelaide Hills strawberry farm, along with South Australian Golden North Icecream and a drizzle of maple syrup!

Honey Cinnamon Sourdough Waffles

These honey and cinnamon sourdough waffles were a hit with our family from the first time I cooked them for a Saturday morning breakfast, before watching Bluey together. They pair perfectly with Green Valley Strawberries from our local Adelaide Hills strawberry farm, along with South Australian Golden North Icecream and a drizzle of maple syrup!

Ingredients

  • 1/2 cup active sourdough starter
  • 2 eggs
  • 2 cups SR Flour
  • 1/3 cup honey (gently warmed)
  • 1 1/4 cup milk
  • 2 tablesppons cinnamon

Instructions

  1. Preheat waffle machine.
  2. Mix all ingredients together. Whisk until smooth batter.
  3. Scoop 1/4 cup of waffle batter into each waffle section.
  4. Cook until golden brown
  5. Serve with icecream, strawberries and maple syrup. Delicious!

Notes

We love to serve our Saturday morning waffles with Green Valley Strawberries from our local strawberry farm, South Australian Golden North Icecream drizzled with maple syrup!
