Do you have questions about dressed weight? If yes, you are not at all alone.

Dressed weight is something that can be a little tricky to wrap your head around in the world of buying farm direct.

Dressed weight is not a sheep dressed in a tuxedo or a cow in a tutu!

Dressed weight is the weight of a carcus of a sheep or cow when it has been slaughtered.
Dressed weight is the industry standard in selling and buying whole, half or quarter animals.


The most tricky thing in understanding buying by dressed weight is that the dressed weight is impacted by the removal of the offal, skin, hoofs and head etc.

Our beef is dry aged (hung) for two weeks and our lamb for one week. 

During the dry aging process, there is a loss of moisture (20-30%), and a gain in flavour and tenderness.


What is important, is that the dressed weight is not the weight of meat and bones that you receive in your box. The weight of meat and bones that you recieve in your box is 20-30% less than dressed weight. This is normal. This is to be expected.
