Roast Lamb - Greek Style
Ingredients
- Leg of Spring Lamb
- 8 potatoes
- 6 cloves garlic, peeled
- 1 onion, peeled and quartered
- Olive Oil, measure with your heart
- Thyme
- Oregano
- Salt & Pepper
- 1 cup Beef Stock
- 3-4 tablespoons of Dijon Mustard
- Lemon Juice, from 2 lemons
- 2 cups water
- Fresh rosemary springs
- Baby spinach leaves, stems removed
- Cherry Tomatoes, halves
- Cucumber, chopped into small chunks
- Fetta cheese, cubed
- Olives, sliced
- 1/4 cup Olive Oil
- 3 tablespoons apple cider vinegar
- 1 teaspoon garlic salt
- 1/2 teaspoon dried oregano
- 1/4 teaspoon dijon mustard
- 1/4 teaspoon sea salt
- Freshly ground black pepper.
- 1/2 cup finely grated cucumber
- 1 cup thick Greek Yoghurt
- 1 tablespoon fresh lemon juice
- 1/2 tablespoon olive oil
- 1 teaspoon garlic salt
- 1/4 teaspoon sea salt
- 1 tablespoon dried dill
- 1 teaspoon fresh mint, finely chopped.
- Flatbreads, toasted or warmed in the oven.
Instructions
- Preheat oven to 180 degrees.
- In a large roasting pan or casserole dish, swish in some olive oil. Place the lamb leg in the middle. Surround the lamb leg with whole potatoes, quartered onion and garlic cloves.
- In a jug, mix together thyme, oregano, salt and pepper, beef stock, mustard, lemon juice, generous glugs of olive oil and water. Mix together and pour over the lamb leg, potatoes, onion and garlic cloves. Tuck rosemary springs in around the side of the roast lamb.
- Cover with alfoil. Cook for 1 hour and 30 minutes. Remove the cover and cook for 30 more minutes for golden brown top of lamb roast and spuds. Remove from oven and rest covered in alfoil.
- In a salad bowl, layer the baby spinach leaves, chopped cucumber, cherry tomatoes, feta cheese and sliced olives.
- In a small jug combine olive oil, apple cider vinegar, garlic salt, dried oregano, mustard, sea salt and black pepper. Mix until combined
- Serve salad with dressing on the side for each person to add to their tastes.
- Place all ingredients in a bowl. Mix together. Place in a small serving dish on the table with a side of toasted flat breads.

Lamb Yiros Pizza
We had this lovely greek-style roast lamb leftovers in our fridge. And I had a hankering for pizza. So I decided to try something different to our regular pizza night featuring our kids favourite ham and pineapple pizza.
This week we enjoyed homemade pizza made with our own Roast Lamb Leg leftovers from our farm.
With the roasted spuds, roasted onion and sweet roasted garlic. Topped with crumbled feta and tzatziki.
This will definitely be a repeat.
Someone in our family, (who will remain nameless), is a fan of the roast and three veg type of roast said βit tastes like Yiros!β. A Junior Farmer also enjoyed and gobbled down a piece. Was so good!

Lamb Yiros Pizza
Ingredients
- Fresh Pizza Dough, with Dried Oregano & Dried Thyme in dough.
- OR a store-made Pizza Base (sprinkle Dried Oregano & Dried Thyme over the tomato sauce)
- Tomato Pasta Sauce
- 200g Roast Lamb leftovers, sliced into small pieces
- 3 roasted potatoes, sliced finely
- 3 roasted garlic cloves leftovers, sliced into small pieces
- 2 roasted onion quarter leftovers, sliced into small pieces
- Half Punnet Cherry Tomatoes, half slit
- 100g Tasty Cheese, grated
- 100g Feta cheese, crumbled
- Tzatziki (see Roast Lamb - Greek Style Recipe).
Instructions
- Preheat oven with pizza stone inside to 200 degrees.
- Make the pizza dough to your recipe. Put 1 tablespoon of dried oregano and 1 tablespoon of dried thyme into the the pizza dough, for an extra greek-style flavour boost. Put a piece of baking paper down, roll out your pizza dough and spread on 3 tablespoons of pizza sauce.
- Store bought pizza bases are a convenient option to get a pizza on the table for your family and I often use them myself. Put a piece of baking paper down, lay out your pizza base, spread on 3 tablespoons of pizza sauce and then sprinkle on dried oregano and dried thyme for the greek-style flavour boost on your pizza.
- Sprinkle on a layer of cheese. Layer on sliced roast potato. Place cherry tomatoes, pieces of roast lamb, roasted onion and roasted garlic on top. Sprinkle on a fine layer of grated cheese. Sprinkle on a little more dried oregano and dried garlic.
- Slide piece of baking paper with the pizza on top onto the pre-heated pizza stone in the oven. Cook for approximately 15-20 minutes, until golden.
- Slide piece of baking paper with pizza on top onto a wooden pizza board. Top with crumbled feta and dollops of tzatziki. Slice up and enjoy!
