Callcannon Recipe - Irish Mash Potatoes
Did you know that Ireland is the home of halloween?
We are going back to Ireland, where Halloween first began with a beautiful creamy potato side, featuring spring onions and kale.
I share this recipe with you after I still remember eating it at a sweet little old Irish Pub on my trip to Ireland almost 20 years ago. On a very wintery day in January, up near the Giants Causeway.
We shared recipe cards for the Callcannon Recipe at the Adelaide Hills Farmers Market and Adelaide Showgrounds Farmers Market last weekend during their halloween events. To be honest, I am not in for all the scares and gore of halloween. It’s really just not me. The commercialism of this celebration feels a little opportunistic also.
So when I discovered that Halloween originated from the celts with a festival of Samhain. As a celebration of the end of spring harvest and start of winter in the northern hemisphere. I thought leaning into the Irish origins of Halloween was a great fit for us.
Last weekend at the Adelaide Hills Farmers Market I learnt that Callcannon is Irelands national dish and that it was featured on Master Chef the week prior.
So, to be sure to be sure, I urge you to give this amazing dish a try with a beautiful slow cooked beef Irish stew, with rich gravy and root vegetables. Callcannon is also amazing paired with a great steak. Just as Mister Farmer and I did last Saturday night.
Callcannon - Irish Mash Potatoes
Ingredients
- 4 potatoes, peeled
- 30g butter
- 1 1/2 kale leaves or 30g cabbage, finely sliced
- 2 spring onions, finely sliced
- 1 cup cream
- salt and pepper
Instructions
- Boil potatoes until cooked through. Drain and mash with cream, salt and pepper.
- In a separate saucepan place kale, spring onions and butter. Cook on a medium heat for a few minutes only, stirring regularly.
- Combine all together.
- Callcannon is the perfect side dish for a beef steak or slow cooked beef dish.
